Flourless Chocolate Cookies
We always feel so decadent eating flourless chocolate cake. Well now, you can share the experience with your cookie swap! Dark, dense…..oh heavenly with a cup of dark roast coffee. Invite a friend over and have a few of these cookies to celebrate you!
1 1/2 cups semisweet chocolate chips
3 large egg whites (room temperature)
2 cups confectioners sugar (10X) plus 2TBSP for rolling (sifting will elimate all lumps)
½ cup good cocoa powder
1 TBSP cornstarch
¼ tsp salt
Preheat over to 350*F. Line 2 baking sheets with parchment paper.
Melt 1 cup of the chocolate chips. Cool slightly, enough to be able to handle. Using a mixer (hand or stand), beat egg whites to soft peaks. Gradually beat in 1 cup 10X sugar. Continue beating until thick and creamy.
Whisk or sift 1 cup of 10X sugar, cocoa, cornstarch and salt in a separate bowl. On low, beat dry ingredients into the meringue mixture. Mix lukewarm melted chocolate and ½ cup chocolate chips into mixture. Dough will be quite thick. Roll dough into 1″ balls and roll in the extra 10X sugar, to coat. Space 2 inches apart on baking sheet.
Bake 15 mins until puffed and tops have cracked. Cool cookies on sheets, on baking racks for 10 minutes.
